I have over 10 years of combined front of house and back of house restaurant and cafe experience including baking at Spruce Confections in Boulder, CO, serving as a pastry cook in Karen DeMasco's pastry kitchen at Craft Restaurant in Manhattan, and rising from part time pastry cook to pastry chef at The Chocolate Room in Brooklyn, NY.

This will be a small, independently owned and operated retail bakery in Old Town Square in Fort Collins, CO. The independent retail market in the area is currently underserved and this will fill a niche by producing fresh scratch made pastries focused on using locally sourced and seasonally inspired ingredients. We will serve a wide variety of breakfast pastries as well as special occasion desserts, brownies, cookies, custards, along with fine coffee and tea beverages. We will have seating for 20-24 persons; the full menu will be available for take out as well.

The location of bakery is ideal. Old Town Square is in the heart of downtown Fort Collins and draws an average of half a million people per year to visit, dine, and shop. During the summer there are activities and concerts held out in the square and in the winter there is an ice skating rink. I believe the exposure created by these events will be a great asset to the growth of Butter.

We will employ 7 people, including myself, upon opening.

I have invested $50,000 of personal funds and am seeking an additional $100,000 to serve as start up capital as well as emergency operating funds. I am seeking an individual who sees the creativity and possibility in this business opportunity and is willing to jump in with me and make this happen!
